: : "Use stainless, glass or porcelain where the materials come in contact with the water and coffee"
: : Does this mean if water is heated separately from the "brewing mix" of water and coffee, that it's container must be stainless, class or porcelain as well? Or rather, if the water is on it's own in a holding tank, must the tank use those materials?

: Water on its own may be in contact with plastic up until the grounds are introduced.

Let me revise that statement: Having water in contact with plastic does not violate the ground rules. However, this may or may not be a bad idea, especially at elevated temperatures. Please be mindful of potential consequences of all your material choices.
