Thats my version of a Cuban Sandwich press. It actually works out pretty good.
Both Kim and I love to cook. She is technically better than me. I usually try out more exotic recipes than she.
In the kitchen we make a good team with her kibbitzing and me taking orders.
Grandma's Broccoli Salad
- 1 Bunch Fresh Broccoli cut lengthwise & crosswise, fine
- 1/2 C. Onion, chopped fine
- 10 - 12 Slices bacon, fried crisp & crumbled
- 1/2 C. Sunflower seeds (preferably salted)
- 1/2 C. Raisins (optional)
- 1/4 C. Sliced almonds
Prepare the above and put together in a bowl.
The Dressing
- 1 C. mayonnaise or salad dressing
- 1/2 C. Sugar
- 2 T. vinegar
Put dressing ingredients in a jar and shake to mix. When mixed thoroughly, pour dressing over salad and mix until covered. Can be served immediately or chilled from the fridge. This one is a winner!
Salsa
- 4 cups ripe tomatos, cored and chopped
- 5 jalapeno peppers, seeded, cored, and chopped
- 2 medium yellow onions, peeled and chopped
- 1/2 green bell pepper, cored, seeded, and chopped
- 1 cup canned tomato sauce
- 1 teaspoon salt
- 1 teaspoon peeled and finely chopped or crushed garlic
- 2 tablespoons chopped fresh coriander (cilantro)
- 1 1/2 tablespoons red wine vinegar
- Salsa jalapena (La Victoria band) to taste
Do not cook. Mix all the ingredients well. The Salsa Jalapena is primary in controlling the 'heat' of your salsa.
If you cant find Sala Jalapena you can purchase a jar of Hot Jalepeno peppers, whole, sliced or whatever. Drain them and run them through a food processor until pureed. Its more vinegar than the real thing but thats ok.
Speaking of food processors, this recipe is best done by hand.
