Biography: Dr. Percival joined UF's faculty in 1989. In addition to this course, she teaches a graduate Advanced Human Nutrition course and conducts research in the area of dietary supplements and immune function. Some supplements that she has studied include Echinacea, grape extracts, immune-modulating whey proteins and tropical fruit antioxidants.

Biography: Dr. Turner has been a member of the UF faculty since 1996. In addition to this course, she teaches undergraduate courses on nutrition and works on Cooperative Extension Service projects in nutrition and food regulation. She is committed to working with students in order to not only master course concepts, but to develop critical thinking skills that will apply to other disciplines and to daily decision making about food, supplements, nutrition, and health.
