Course Information
Course Description:
This course
will address the federal laws and regulations that regulare the definitions,
marketing, and labeling of dietary supplements. The cousre will include
discussion on specific vitamins, minerals, herbs, and ergogenic aids.
We will also review scientific literature and public information.
Course Objectives:

alleged uses, proposed active ingredients, proposed mechanism of action,
and scientific support for efficacy for specific supplements

is known, and what is still unknown scientifically related to dietary supplements

Develop and evaluate
public information on dietary supplements
- Develop skills in
online communication and presentation of information
Prerequisites:
One college-level
course in introductory nutrition, or consent of instructor.
Required
Materials
No text
or other printed materials are required. Online readings are assigned
for each topic. Students must have a computer that meets the minimum
requirements as stated in the UF Computer Policy.

Each module
will consist of the following:
Background
Reading: required reading assignments (online).
Mini-Lecture:
a brief PowerPoint presentation with audio.
Discussion
Topic: some modules include a bulletin board topic for the week; students
must contribute to the online discussion at least once by Thursday of that
week.
Activity:
some modules include an assignment requiring the application of
concepts from the readings and lecture; required portions of the
assignment will be submitted electronically.
Evaluation
Questions: a online quiz to test your understanding of the material;
the quiz must be taken no later than Monday of the following week.
Homework Deadlines
Discussion
Participation: students
must contribute to the online discussion at least once by Thursday
of that week.
Activities:
complete and submit any required activities by Thursday of each
week.
Evaluation
questions: Monday of the week following that module.
Major
Project: December 8 (see Major
Project for periodic progress markers).
Tests and
Exams
An online quiz
will be given at the end of each module. The quiz will be available beginning
on Thursday, and must be completed by the following Monday. Questions will
be based on material from the reading and mini-lecture. No other exams
will be given.
